    浙江省鲜香菇重金属背景值及安全质量评价

    【中文摘要】 在浙江香菇主产区抽样检测,对数据进行分析统计,首次提出了浙江省鲜香菇重金属背景值。统计结果显示浙江省鲜香菇重金属背景值分别为铅0.063mg.kg-1、镉0.110mg.kg-1、砷0.036mg.kg-1、汞0.011mg.kg-1。经与相关标准进行比较,鲜香菇中重金属指标还是相对安全的,但鲜香菇重金属含量明显高于一般蔬菜,尤其是镉和汞。香菇中的镉含量值得关注,香菇对重金属镉的富集能力较强,是鲜香菇质量安全控制的重点。香菇重金属含量与生产过程相关,选择适宜的香菇产地环境条件,采用富集能力低的香菇品种、改良栽培基质配方、改革栽培技术能有效降低香菇中重金属含量。

    【英文摘要】 Background levels of heavy metal contents in fresh Lentinus edodes from Zhejiang Province were firstly reported after random sampling in main supplying areas and analyzing resulted spectrometric data statistically.Determined levels were 0.063mg·kg-1 for Pd,0.110mg·kg-1 for Cd,0.036mg·kg-1 for As,and 0.011mg·kg-1 for Hg,respectively.The study was done through in-field sampling at reliable growing farms,followed by the standard lab analyses,and the statistical treatment with proved methods.Therefore,obtained values were considered representative and trustworthy.Compared to related national and industrial quality standards,levels of heavy metal contents in fresh Lentinus edodes from Zhejiang Province were safe and in low end.However,they were apparently higher than the levels of heavy metal contents found in common vegetables;especially for Cd and Hg.Because of the high bioaccumulation tendency of Lentinus edodes toward metal Cd,Cd level in fresh Lentinus edodes was noteworthy and should ...更多be the focus regarding to quality controls.The levels of heavy metal contents in fresh Lentinus edodes were also related to cultivation practice.Therefore,choosing appropriate environment for cultivation areas,using species with low bioaccumulation tendency toward heavy metal elements,and improving the components of cultivating base and growing techniques could reduce the levels of heavy metal contents in fresh Lentinus edodes.  还原
